Comprimising your healthy choices.

It's easy to compromise healthy choices.case in point.Today was Steven's 18th birthday.We had Honey Mustard chicken over rice and  had lemon cake with Ice cream. I normally make very healthy choices.But,today I had a 1 cup honey mustard chicken with 1 cup  white rice.I also had about 1 1/2 cups ice cream.About 2 hrs later my tummy hurt! I promptly ate some yogurt and now my tummy feels much better!Not only do our choices become compromised so do our bodies.I love veggies,fresh fruits and soy milk.What I have discovered is I do better eating the foods I like.I really don't like dairy products or meat that much.One of my favorite soups I make from scratch is also very easy.2, 15 once cans diced fire roasted tomatoes,3 cups fresh sliced carrots,2 large onions diced,4 large parsnips sliced,4 stalks celery diced,2 cup fresh green beans cut in 1 inch chunks,6 cups fat free chicken or beef or veggie broth.Put all in a BIG soup pot and bring to a boil.At this point I like to add what ever seasonings I like.Flavored vinegars work well also.Adding less is more.Add a little taste then season some more if it needs it.Don't over do it.Then turn down to a slow simmer for about 45 minutes.The great thing is you can eat as much as you want of soups like this with out adding almost any calories to your waist line.And it's packed full of vitamins and taste yummy!I have tried many "diet" foods and learned the hard way they taste like crap and are loaded with salt and they are spendy.It's just makes much more sense to take the time to prepare your own soup and it's very cheap.I am hooked on soup.I also have a love of fresh fruit.I am working on getting pictures and more recipes up.Bear with me please!And remember ,you are worth taking time for yourself!Love,Mollie
